Italians reacted with anger after publishing a recipe for a traditional Roman dish by the popular UK Good Food website that did not include the correct original elements and was shown as a quick food.

Pasta Casio E Pepe is a favorite Roman dish, which is famous for being stunning to be simple – so the description of good food is something that can quickly be killed quickly for “a fast lunch”.

The recipe also listed four ingredients – spaghetti, black pepper, permesson and butter and double cream as an alternative – when there should be only three: spaghetti, pepper and peckorino cheese.

There was such anger that a union representing the restaurant in Italy took the issue with the British Embassy in Rome.

One of the food associations of Italy said that he was “surprised” to see the recipe on such a respected British food site, owned by BBC until 2024. Its President Claudio Pika said that the letters were immediately sent to the media, the owner of the site and the UK Ambassador to Edward Levelin.

Mr. Pika said: “This reputed cuisine, traditionally from Rome and Lajio region, has been a major of Italian cuisine over the years, so it has also been repeated beyond the boundaries of Italy.”

He regretted the British site, but clarified that “the original recipe for Cacio E Pepe excludes Parmeson and butter. There are no four materials, but three: pasta, pepper and pecorino”.

While some chefs can experiment with dish, the main concern is that the website misleads readers by presenting its version as original.

Italians often make fun of foreigners to explain their dishes, but the anger in this case is somewhat deep: tampering with the tradition.

Maurizio and Laurdana run a hotel in Central Rome – it has been in his family for four generations.

“You can do all the variations in the world – but you can’t use the original Italian name for them, said Mauurizio.” You cannot say that it is a cacio e pepe if you add butter, oil and cream to it. Then it becomes something else. ,

Georgio Aramo runs a fresh pasta restaurant near Saint Peter Square – Cacio E Pepe and serve other traditional pasta recipes.

On the passed board of his restaurant, he offers casio e pepes with lime – a variation. But he says that is fine.

“It is different, it’s for summer, to make the pasta more fresh. But it does not affect the tradition. It is not like cream or butter. Lime is just a small change.”

Nikola, who runs a sandwich shop near Vatican, took a special issue with the cream involving the cream.

Italians are often angry when foreigners tinker with their food dishes – pizza with pineapple, carbonra with cappukino or cream after noon, for example.

Elonora, who works in a busy cafe in Central Rome, feels that it is not necessary for Italians to make so much anger about something like this, but understand why they do.

“Our tradition is based on food. So if you touch only one thing that we have, then all over the world … which can make us feel a bit sad.”
